Hey loves, how’s 2021 treating you? A bit of a rollercoaster so far, uh?! That’s why I’m here with this ultra cozy gnocchi recipe for you guys!
This Gnocchi Gorgonzola has the best Gorgonzola Sauce for gnocchi you’ll ever have!!! It has *NO* cream but it’s ultra creamy & rich thanks to my secret ingredient: Mascarpone Cheese!
GAME. CHANGER.
Who even needs cream when you have Mascarpone?! You guys HAVE to try this recipe!!! This sauce comes together in 5 minutes & it’s super cheesy & creamy. No cooking skills needed but omg people will think you’re a whole chef. Seriously.
Also, you can top this dish with your favorite toppings like walnuts, bacon or Radicchio (more ideas later) & really take it to the next level! I like mine topped with walnuts & sauteed radicchio: nutty & slightly bitter… you guys… dream combo!

What is Gorgonzola Gnocchi?
Okay here’s some context for those of you who are new to gnocchi recipes!
Gorgonzola gnocchi is basically potato gnocchi coated in a creamy gorgonzola sauce. It’s a very cheesy & comforting dish.
What is Gorgonzola Sauce made of?
Usually Gorgonzola sauce is made with Gorgonzola cheese & heavy cream but my secret-ingredient recipe doesn’t call for heavy cream!
In fact, I make my Gorgonzola sauce with a mix of Gorgonzola & Mascarpone cheese & it always turns out ultra cheesy, ultra creamy & SO flavorful!
I promise you’ll never add cream to your gorgonzola sauce ever again!
💡PRO TIP: you can also use this sauce to make Gorgonzola pasta!
What does Gorgonzola Sauce taste like?
This Gorgonzola Sauce has a savory & slightly pungent flavor with a sweet, buttery & tangy finish.
Important! The taste of your Gorgonzola Sauce will depend on the type of Gorgonzola cheese you plan on using: Gorgonzola cheese can be soft & creamy with a mild taste or firm & salty with a much stronger taste.
For this recipe, I recommend using young, soft Gorgonzola cheese because it will melt more easily while & add more richness & creaminess to your sauce without being too sharp or pungent.
Ingredients for Gnocchi with Gorgonzola Sauce
- Gnocchi. Use fresh gnocchi for this recipe!
- Butter. I used unsalted butter but salted will work too, just make sure you’re not using a particularly salty Gorgonzola cheese or your sauce will turn out too salty.
- Gorgonzola cheese. You want young, soft Gorgonzola cheese for this sauce because it will melt more easily & it won’t be too sharp & pungent.
- Mascarpone cheese. This is the secret ingredient aka what makes this sauce so delicious & flavorful! Do not substitute this ingredient!
- Parmesan cheese. This is optional but if you’re looking for extra flavor, go for it & top your dish with some freshly grated Parmesan cheese!
- Salt & Pepper. To taste! Go easy on the salt if you’re using salted butter.
How to make Gorgonzola Sauce for Gnocchi
- Add water to a large pot. Place the pot over medium-high heat & bring the water to a rolling boil.
- Meanwhile, make the sauce. Add the butter, Gorgonzola & Mascarpone cheese to a large skillet over low heat. Allow the cheeses to melt completely. This may take anywhere from 2-6 minutes. Use a wooden spoon to stir the mixture from time to time!
- Add the gnocchi to the boiling water. Cook the gnocchi until it floats to the top. Once you see the dumplings float to the surface, drain them & immediately add them to your skillet & toss them with the prepared sauce.
- Cook for another 30 seconds, sprinkle with grated Parmesan cheese (optional), mix & add your favorite toppings if desired. I like my Gorgonzola gnocchi topped with sauteed Radicchio!
- Serve immediately & dig in! 🙂

Gorgonzola Sauce For Gnocchi
Ingredients
- 1 16 oz package fresh gnocchi
- 1 tbsp unsalted butter
- 7 oz soft Gorgonzola cheese
- 7 oz Mascarpone cheese
- 1/4 cup grated Parmesan cheese optional
- Salt and pepper to taste
