Instructions
Make the cilantro dressing. Add all the ingredients to a blender and blend until smooth. Taste and adjust seasonings. Let sit for 10-15 minutes or overnight (recommended) for best flavor.

What to use cilantro lime dressing on: Tacos, burritos, quesadillas, empanadas, roasted chicken (a favorite!), fish, grilled meats, fried halloumi bites, tropical pasta salad, roasted veggies, fries, as a sandwich spread, on rice or bean bowls or as a marinade!Storing Instructions: Store cilantro dressing in air-tight container or jar in the refrigerator for up to 4-5 days. Shake or mix before using! Keep in mind that it also depends on how fresh the cilantro was, if it wasn't super green and fresh but was already wilting a bit, use it up within 3-4 days.
