(or just one 16-oz coleslaw mix)

shredded purple cabbage

1 cup

shredded carrots

1/4 cup

minced cilantro
(optional)

sour cream

1 and 1/2 tbsp

lime juice
(or vinegar)

Instructions
Make the dressing
. In a small bowl, mix the sour cream, mustard, lime juice, salt, and pepper. Taste and adjust seasonings.
Make the coleslaw
. Add the shredded veggies and cilantro to a large bowl, pour in the dressing and mix until combined. Enjoy!
