This Maracuya Juice (Passion Fruit Juice) is bright, tropical and sweet with a hint of tang!It’s perfect for spring and summer and absolutely delicious when paired with Latin American dishes such as Colombian Empanadas, fried fish, Fried Yuca, beans, meats and more!
7-8largemaracuyas (passion fruit)(I use the big yellow kind, you might need more if you use small pink maracuyas and they might be sweeter so you might need less sugar)
1 cup(200 g)white granulated sugar(or to taste)
3-4 cups(750 ml-1 liter)water(start with 3 cups and add more, if desired)
Ice(or crushed ice if you want to make a "Frozen De Maracuya")
Instructions
Open the Maracuyas by slicing them in half, use a scoop to scoop out the pulp with the seeds and add it to a blender.
Make the juice. Blend for 30 seconds and then pass through a fine mesh sieve, add sugar and mix until dissolved, pour in the water then serve with ice (or crushed iced for a “Frozen De Maracuya”). Store in the refrigerator for up to 3-4 days or freeze for up to 2-3 months and thaw in the refrigerator so it stays ice-cold!
