Cut the sweet potatoes. Scrub and peel the sweet potatoes, then dice them into 1/5-inch (1 cm) cubes.
Season. In a bowl, add the diced sweet potatoes and oil and toss until coated. In a separate bowl, add the cornstarch, paprika, garlic powder, salt, and pepper, and mix. Add in the sweet potatoes and toss until evenly coated.
Cook. Heat a large skillet over medium-high heat. Once hot, add in the sweet potatoes and cook for 10-15 minutes or until crispy on all sides, flipping them from time to time to make sure they cook evenly.

Make-Ahead Instructions: I don't recommend making these ahead of time as sweet potatoes tend to turn mushy over time.Storing Instructions: store any leftovers covered or in an air-tight container in the refrigerator for up to 2-3 days. Reheat until hot and crispy again.
