A Thanksgiving favorite that will give you a break from basic glazed carrots: Spicy Honey Garlic Glazed Carrots!Deliciously savory-sweet and garlicky with a nice kick and lots of flavor, this 20-minute side-dish is perfect for the Holidays or even weeknight dinners! No need to turn on the oven!
2 lbs(900 g)carrots of choice (regular, baby carrots, or rainbow)(scrubbed, peeled or unpeeled)
2 cups(500 ml)water
1/4 cup(55 g)unsalted butter
3 tbsp(60 g)honey(mild, neutral flavor)
3-4clovesgarlic(minced)
1/4teaspooncayenne pepper(or to taste)
1/2teaspoonsalt(or to taste)
1/4teaspoonground black pepper(or to taste)
Instructions
Cook the carrots. Add the sliced carrots and water to a large skillet over medium-high heat. Allow the water to come to a boil, then reduce the heat and cover with a lid. Simmer for 8-10 minutes or until tender. Drain any excess water and set the heat to medium.
Make the spicy honey glaze. Add in the butter, honey, garlic, cayenne pepper, salt, and pepper and mix to evenly coat the carrots. Cook until the glaze has thickened (about 2-3 minutes), then remove from the heat and serve. You can top the carrots with chopped parsley, chives, sesame seeds, or feta cheese for some tang.

Storing Instructions: store any leftovers covered or in an air-tight container in the refrigerator for up to 2-3 days.Reheating Instructions: transfer the carrots to a buttered skillet over medium heat and cook until heated through. You can add extra butter if you notice the texture is a bit dry. Alternatively, you can reheat them in the microwave for 1 minute and then at 30-second intervals and heated through.
