16 oz(450 g)fresh spinach Spaetzle(or regular fresh Spaetzle, they're in the fresh pasta section of your local grocery store)
2 tbsp(30 g)unsalted butter
10 oz(280 g)high-quality blue cheese(get a super soft blue cheese that doesn't have much mold/green spots)
Kosher salt and pepper(to taste)
Instructions
Cook the Spaetzle according to the package instructions. Usually, that involves filling a pot with water, bringing it to a boil and then adding the Spaetzle and cooking it until floating and tender (usually a minute). While you wait for the water to boil, make the sauce in step 2.
Make the cheese sauce. In a large skillet over low heat, melt the butter. Once the butter has melted, add the blue cheese and use a wooden spoon or a spatula to break down the cheese and stir until a creamy sauce comes together. Toss the cooked Spaetzle into the sauce. Serve immediately.

Storing Instructions: Store any leftovers covered or in an airtight container in the refrigerator for up to 1-2 days. Reheat until hot with a splash of milk or cream. Keep in mind that the Spaetzle might get softer and fall apart easily once reheated.
