Spinach Spaetzle with Cheese Sauce
Spaetzle and cheese is one of my go-to nostalgic dinners when I want something comforting and cheesy but quick and easy to make.
This dish can be made with regular or spinach Spaetzle and it truly hits the spot on a cold winter night!

Ingredients for Spinach Spaetzle with Cheese
Spaetzle, spinach or regular. To make this a 5-minute meal, I use storebought Spaetzle which you can find in the fresh pasta section of your grocery store. I used spinach Spaetzle but you can also use the regular Spaetzle with just flour and eggs (they resemble gnocchi in color).
Butter, unsalted. For creaminess, flavor, and to help the cheese sauce come together.
Blue cheese. It’s essential that you get the softest blue cheese you can find. I like “Gorgonzola Dolce” for this because it has a very creamy texture that just blends beautifully into the perfect cheese sauce but any high-quality soft blue cheese will work. Also, make sure it doesn’t have much mold/green spots for best texture.

Spinach Spaetzle With Cheese Sauce
Ingredients
- 16 oz (450 g) fresh spinach Spaetzle (or regular fresh Spaetzle, they're in the fresh pasta section of your local grocery store)
- 2 tbsp (30 g) unsalted butter
- 10 oz (280 g) high-quality blue cheese (get a super soft blue cheese that doesn't have much mold/green spots)
- Kosher salt and pepper (to taste)
Instructions
- Cook the Spaetzle according to the package instructions. Usually, that involves filling a pot with water, bringing it to a boil and then adding the Spaetzle and cooking it until floating and tender (usually a minute). While you wait for the water to boil, make the sauce in step 2.
- Make the cheese sauce. In a large skillet over low heat, melt the butter. Once the butter has melted, add the blue cheese and use a wooden spoon or a spatula to break down the cheese and stir until a creamy sauce comes together. Toss the cooked Spaetzle into the sauce. Serve immediately.
