This Oreo Strawberry Cheesecake Parfait tastes just like a strawberry cheesecake but it comes together in just 10 minutes! With whipped cream cheese, fluffy heavy cream, fresh strawberries and crunchy crushed Oreo, this quick & easy no-bake dessert is perfect for when you're craving something sweet & fruity!
14Oreo cookiesDouble Stuf or regular, use gluten-free for GF eaters
8 oz(225 g)cream cheeseroom temperature
1/4 cup(31 g)powdered sugar
1teaspoonvanilla extract
1 cup(250 ml)heavy creamcold
Instructions
Prepare the strawberries. Soak the strawberries in a mixture of water and baking soda for 1-2 minutes to get rid of dirt and chemicals, rinse under cold water, and cut off the stems. Cut half of the strawberries in half lengthwise and set aside. Dice the remaining strawberries, add them to a medium bowl, sprinkle with white granulated sugar, and let sit for 10-15 minutes or until they have released their juice.
Crush the Oreos. Add the whole Oreo cookies to a food processor and crush into fine crumbs.
Prepare the cheesecake mixture. You'll need a stand mixer fitted with a whisk attachment or a handheld mixer for this step. In a medium bowl, beat the cream cheese until creamy, then add the powdered sugar and vanilla and beat until fluffy and smooth. Set aside. In a large bowl, whip the heavy cream into soft peaks, add the powdered sugar, and whip into stiff peaks. Gently fold the heavy cream into the cream cheese mixture using a rubber spatula. Be very gentle when folding or the heavy cream will deflate. Transfer the mixture into a piping bag fitted with your favorite tip.
Assemble the strawberry cheesecake parfaits. Place a few spoonfuls of Oreo crumbs into the bottom of each glass, add the halved strawberries along the sides of each glass, pipe some of the cream cheese mixture into each glass, top with another layer of Oreo crumbs, cheesecake mixture, and finally add the diced strawberries on top. Decorate with extra whipped cream or cheesecake mixture and whole strawberries if desired! Serve immediately.
