1 tbsp(15 g)tomato paste(or tomato passata if unseasoned or ketchup)
1teaspoonancho chili powder
1/2teaspoonpaprika
1/4teaspoongarlic powder(skip if using sauteed fresh garlic)
1/4teaspoononion powder(skip if using sauteed fresh onion)
1/4teaspooncumin
2 cups(250 ml)water
1 tbsp(15 ml)lime juice(about 1/2 lime)
Instructions
Toast your rice. In a saucepan or skillet over medium heat, add butter or oil and allow to heat until hot. If using fresh onion and garlic, sauté until soft. Add the rice to the hot oil and toast for a minute while you stir.
Season. Add the tomato paste, mix (be careful, it’ll sizzle!) and cook for 30 seconds. Add the water, garlic powder and onion powder (skip if using fresh), chili powder, paprika, cumin and salt.
Cook uncovered until the water starts boiling, then cover with a lid and cook until the water evaporates then top with lime juice!

Storing Instructions: Store leftover rice in an air-tight container in the refrigerator for up to 2-3 days or in the freezer for up to 2 months.Reheating Instructions: Reheat covered in a skillet over low heat with 2-3 tablespoon of water, stir occasionally. Or microwave for 60-90 seconds sprinkled with 1-2 tablespoon water loosely covered with a damp paper towel.
