Add the peeled and pitted avocados to a medium bowl, then add in the lemon juice and mash them up using a fork or a potato masher. Add the red onion and salt and mix until combined. Serve immediately or let sit for 30 minutes covered with plastic wrap to allow the avocados to soak up the flavors, then serve.
Notes
Storing Instructions: guacamole is best eaten fresh but if you do have leftovers, cover them with plastic wrap directly pressed on top of the guacamole and up over the sides of the bowl to keep air from coming into contact with the guac. Store it in the refrigerator for up to 1-2 days. I personally recommend sticking to just overnight as avocados tend to turn brown over time. While brown guacamole is still safe to eat, it can look unappetizing and take on a slightly bitter note.
