Loaded with fresh cabbage, carrots, onions, and garlic stir-fried in a delicious 2-minute homemade stir-fry sauce, this Veggie Vermicelli Stir Fry is quick and easy to make and healthier than take-out!Don’t have cabbage or carrots on hand? Use what you already have on hand: broccoli, bell peppers, zucchini, eggplants, mushrooms, you name it! Carnivore? Add in chicken, beef, spam, or shrimp!
5 cups(500 g)shredded cabbage(this would be a little over 1 lb of cabbage)
1 cup(110 g)shredded carrots(about 2 carrots)
For The Homemade Stir Fry Sauce
1 cup(250 ml)water
6 tbsp(95 ml)soy sauce(use GF soy-sauce for GF eaters)
2 tbsp(30 ml)rice vinegar(or white vinegar)
3 tbsp(35 g)brown sugar(or white sugar)
2 and 1/2 tbsp(25 g)cornstarch
Instructions
Soak the Vermicelli. Fill a large bowl with room temperature water, add in the Vermicelli, and let it soak for 2-5 minutes. The Vermicelli should be soft and springy but not limp. Drain and set aside.
Prepare the stir-fry sauce. In a medium bowl, add the water, soy sauce, rice vinegar, brown sugar, and cornstarch. Mix until smooth. Set aside.
Saute the onion and garlic. In a large skillet or wok over medium heat, add the peanut oil. Heat the oil until hot, then add in the diced onions and saute for 2-3 minutes. Add in the minced garlic and saute for another 1-2 minutes or until soft and fragrant.
Stir-Fry. Add in the shredded cabbage and carrots, mix and stir-fry for 2-3 minutes or until soft but not completely wilted. Add in the Vermicelli and mix, then immediately pour in the stir-fry sauce, mix and cover with a lid. Steam for 3-5 minutes, then remove the lid and turn off the heat. Serve immediately! Top with sweet chili sauce, fresh spring onions or toasted sesame seeds if desired.
