If summer were a salad, it’d definitely be this one! Watermelon Salad features cubes of sweet watermelon, juicy cucumber, tangy feta cheese, and fresh mint leaves with a homemade zesty 2-ingredient lime dressing!Ready in just 30 minutes, this salad is perfect for those long summer days.
Mint leaves(fresh, chopped, to taste, you can skip this if preferred)
Instructions
Prepare the watermelon. Remove the rind and all seeds, then cut into small cubes and place in a colander to drain for a few minutes to remove any excess juice.
Prepare the cucumber. Peel and cube the cucumber, place it in a plate or shallow bowl, salt, and allow to sit for a few minutes. Discard the juice.
Make the dressing: In a small bowl, combine the lime juice, olive oil, salt, and pepper.
Assemble the salad when ready to serve. In a large salad bowl, add the cubed watermelon, cucumber and crumbled feta cheese. Pour in the dressing and mix gently to combine. Top with fresh mint leaves (if using) and extra feta cheese (if desired). Serve immediately, you don't want this salad to sit too long or it'll become soupy because of the natural juices of the watermelon and cucumber.
Notes
Storing Instructions:This salad is best enjoyed as it’s made so I don’t particularly recommend planning on storing it. If you do have leftovers though, you can store them covered in the refrigerator for 1-2 days. Keep in mind that the salad will naturally become a bit soupy because of the juices of the watermelon and cucumber. While still good and safe to eat, it’s best eaten fresh. You may remove any extra juices before eating the leftover salad.
