    Here’s salad that tastes like summer in a bowl: sweet watermelon with juicy cucumbers, tangy feta cheese, and fresh mint leaves with a zesty lime dressing!

    Ingredients for watermelon salad

    Watermelon. This is a simple salad with few ingredients so make sure you get the freshest of watermelons for best texture and flavor!

    Cucumber. Peeled and cubed.

    Lime juice. I highly recommend you get some fresh limes and make your own lime juice at home for best flavor. Lemon will also works if you just have lemons at home.

    Olive oil. Make sure to use high-quality extra-virgin olive oil for best flavor as cheaper olive oil are usually quite bitter and overpowering.

    Feta cheese. Use goat milk feta cheese, not cow: you want all that delicious tang in your salad!

    Mint. Get fresh mint leaves. You can skip this if you think it’s not for you but it does add a nice touch to this dish!

    Salt and pepper.


    Watermelon Salad With Cucumber


    How to make watermelon salad with feta

    STEP ONE: Prepare the watermelon. Remove the rind and all seeds, then cut into small cubes and place in a colander to drain for a few minutes to remove any excess juice.

    STEP TWO: Prepare the cucumber. Peel and cube the cucumber, place it in a plate or shallow bowl, salt, and allow to sit for a few minutes. Discard the juice.

    STEP THREE: Make the dressing: In a small bowl, combine the lime juice, olive oil, salt, and pepper.

    STEP FOUR: Assemble the salad when ready to serve. In a large salad bowl, add the cubed watermelon, cucumber and crumbled feta cheese. Pour in the dressing and mix gently to combine. Top with fresh mint leaves (if using) and extra feta cheese (if desired). Serve immediately, you don’t want this salad to sit too long or it’ll become soupy because of the natural juices of the watermelon and cucumber.


    Storing Instructions

    This salad is best enjoyed as it’s made so I don’t particularly recommend planning on storing it. If you do have leftovers though, you can totally store them covered in the refrigerator for 1-2 days.

    Keep in mind that the salad will become a bit soupy because of the natural juices of watermelon and cucumber. While still good and safe to eat, it’s best eaten fresh. You may remove any extra juices before eating the leftover salad.

    Ingredients
      

    • 10 cups (1.5 kg) cubed watermelon (about 1 8-oz watermelon)
    • 4 cups (480 g) cubed cucumber (about 1-2 cucumbers)
    • 1/3 cup (70 ml) extra-virgin olive oil
    • 3 tbsp (45 ml) freshly-squeezed lime or lemon juice
    • 2 teaspoon salt
    • Ground black pepper.
    • 8 oz (225 g) Feta cheese (drained and crumbled)
    • Mint leaves (fresh, chopped, to taste, you can skip this if preferred)

    Instructions
