    • Easy enough for weeknights: Simple ingredients and a straightforward method make this a no-stress side dish you can whip up in minutes. Kids love the fun color!
    • Pairs with just about everything: Whether it's roasted meats, veggies, or a cozy vegetarian plate, this dish fits right in and elevates the whole meal.

    Ingredients

    purple sweet potatoes

Purple sweet potatoes. There are many types of purple sweet potatoes, the most popular in the US is the Okinawan type which is mildly sweet, earthy and nutty. I recommend getting those but Stokes (less sweet than orange sweet potatoes) work too. Some have cream-colored marbling in the flesh, it’s okay, they’ll still give you a fun purple color when mashed.

Butter, for creaminess. Purple sweet potatoes are generally a bit on the drier side compared to regular potatoes or orange sweet potatoes so you need to add some fats to them. I like using unsalted butter so we can control the amount of salt I add!

Milk or cream, to get an even creamier texture. I usually reach for milk since it's what I most often have on hand, and it keeps things a bit lighter, but half-and-half or cream also works and will make them extra rich (just a touch heavier). Plant-based milks work too: my favorite is coconut milk, which pairs so well with the lime!

Lime juice. Lime juice is what really sets this mash apart from all the other traditional recipes: it brightens everything up and keeps the flavor fresh and lively instead of overly rich. It also reacts with the pigment in purple sweet potatoes, turning them magenta! It's my little secret ingredient, but it's totally optional if you’re going for a classic mash. Lemon can be used instead if you prefer, but it’ll give you a softer, less vibrant citrus flavor.

    Salt and pepper for flavor.

    Substitutions & variations

Garlic: Add roasted garlic for a delicious garlicky flavor. Add 4-6 cloves for a mild garlic flavor and up to a whole head for a stronger flavor.

Tropical + Dairy-Free: Use coconut milk or cream instead of regular milk.

Sweet: Stir in 3-4 tablespoon (45-60 g) maple syrup and 1/2 teaspoon vanilla extract for a quick and easy dessert! Top with pecans or walnuts for some crunch. Skip salt, pepper, and lime juice.

How to make mashed purple sweet potatoes

how to cook purple sweet potatoes

Step 1: Prepare the potatoes. Wash and peel the sweet potatoes as you would regular potatoes. Cut into 1-inch (2.5 cm) cubes and add to a pot with water and salt. Make sure they’re submerged by about 1 inch of water for even cooking.

Step 2: Cook. Place the pot over medium-high heat, bring to a boil, then cook for 15 minutes or until the sweet potatoes are fork-tender. Drain.

Step 3: Mash. Add the milk, butter, salt, and pepper. Using a potato masher, a fork or a mixer or an immersion blender, mash until the potatoes reach a creamy consistency or your favorite consistency. Keep in mind that these kinds of sweet potatoes are drier than orange sweet potatoes and regular potatoes.

Step 4: Taste and adjust seasonings, if desired. Top with lime juice and mix well (the lime juice will turn the mash from purple to magenta).

    Expert Tips

Start with evenly sized chunks for even cooking: Cut the sweet potatoes into similar-sized pieces so they cook at the same rate. This helps you avoid a mix of mushy and undercooked chunks!

Use lime for brightness: This is what makes my mashed purple sweet potatoes different! A squeeze of fresh lime not only adds a pop of freshness that balances the natural earthiness, but it also transforms the deep purple into a vibrant magenta. It keeps the mash light, bright, and distinct from heavier traditional recipes.

Don't overmix once mashed: Purple sweet potatoes can turn gluey if overmixed. Mash just until smooth for the creamiest texture. A hand masher works better than a blender!

    Serving ideas

Our favorite way to serve these at home is alongside my Creamy Cilantro Chicken with plain rice. For something a little lighter and more summery, we love them with my Chili Lime Salmon with Cilantro Lime Rice.

They also pair beautifully with pork chops, roasted chicken, pork tenderloin, seared scallops, shrimp or Teriyaki Tofu.

For sides, you really can’t go wrong with, roasted asparagus, brussels sprouts, roasted carrots, Garlic Butter Green Beans or sauteed kale.

    Frequently Asked Questions

Why is my purple sweet potato mash purple not magenta?

To turn purple sweet potato mash magenta, you need acidity, as it affects the pigment’s structure. My recipe calls for lime juice to add brightness and that’s what will make your mash a fun magenta color!

Are purple sweet potatoes good for mashing?

Yes, purple sweet potatoes are good for mashing but they behave a little differently from orange sweet potatoes and other potatoes. Because they’re dried and denser, they need a bit more help from fat or liquid.

What is so special about purple sweet potatoes?

Purple sweet potatoes are special for their high levels of anthocyanins which are powerful antioxidants that give them that deep purple color. They also have a pretty earthy flavor and slightly drier texture compared to other potatoes. I think it’s this mix of nutrition, flavor and color that makes them so special!

Is purple sweet potato healthier than sweet potato?

Both can be healthy but they offer different nutritional strengths. Purple sweet potatoes are higher in anthocyanins (antioxidants with anti-inflammatory qualities) while orange sweet potatoes are much higher in beta-carotene, which the body converts into vitamin A. In terms of fiber, complex carbs, and overall nutrients, they're actually very similar!
