These Mexican Marinated Eggs are zesty and refreshing! Think hard boiled or jammy eggs pickled in lots of lime juice with crunchy onions, spicy serrano peppers, creamy avocado and fresh cilantro!Viral on TikTok, these eggs are perfect for a refreshing summer lunch or breakfast!
1/2largered or white onion(raw or pickled, thinly sliced or try our Lime Pickled Onions)
1jalapeño or serrano pepper(optional, raw or pickled, thinly sliced - skip if you don't want the eggs to be spicy)
1-2avocados(we like Hass avocados)
Salt and pepper(check the "Notes" down below for add-ins and fun variations)
Instructions
Boil the eggs. In a medium saucepan over high heat, add enough water to cover the eggs by about 1 inch (or 2.5 cm). Bring to a rolling boil, gently lower the eggs into the water then reduce the heat to medium-high or enough for the water to still bubble. Boil for 6 minutes for jammy yolks, 8 minutes for soft yolks or 10 minutes for hard boiled. Remove from the hot water and add to a bowl with ice-cold water so they stop cooking. Peel.
Marinate. In a bowl, add the onions, avocado, jalapeños (if using), lime juice, salt, pepper and any other seasoning or sauce you like, mix gently so everything is evenly seasoned then add in the eggs (whole if jammy or sliced if hard boiled). Taste and adjust seasonings. Enjoy or store covered with plastic wrap or in an air-tight container overnight for deeper flavors.
