    Lime Pickled Onions

    These Lime Pickled Onions are one of those toppings we love keeping on hand because they’re deliciously refreshing and zesty and add so much flavor!

    We love them on Ecuadorian Fish Cakes (the pretty dish below, you totally have to try them!!!), Potato Cakes, and fried fish!

    These Lime Pickled Onions are:

    Lime Pickled Onion Ingredients

    Red onions. We like a bit of a crisp so I slice them pretty thin but not too thin, if you like a thinner onion, you can definitely slice them even thinner.

    Lime. Get fresh limes for this recipe, I don’t recommend bottled lime juice for these because it’s just 3 ingredients and you want them to be fresh and good quality for best flavor!

    Salt, for flavor.

    Optional: sugar, if your onions are a bit old and you find the taste a bit too onion-y once you pickled them with lime, you can add in a dash of sugar to balance out the flavors!



    How to Make Lime Pickled Onions

    STEP ONE: Slice the onions about 1/8-inch (3 mm) thick. You can also cut them thinner for no crisp or thicker up to 1/4-inch (6 mm) thick but they’ll take a bit longer to pickle!

    STEP TWO: Prepare the onions. Add the sliced onions to a jar or bowl, pour in the fresh lime juice, salt and mix. I recommend using a small jar or bowl because you want all the onions to be submerged in the lime juice.

    STEP THREE: Chill in the refrigerator tightly covered for at least 30 minutes (mixing once) or overnight.


    How Long Do Lime Pickled Onions Last?

    Lime Pickled Onions can last up to a week when stored tightly covered or in a jar with a lid in the refrigerator!


    Variations

    Jalapeño: add 1/2 to 1 jalapeño (thinly sliced).

    Oregano: add 1/2 teaspoon oregano.

    Cilantro: add 1/2 tablespoon fresh cilantro (finely minced).

    Garlic: add 1 small clove garlic (thinly sliced or crushed) or a dash of garlic powder for a lighter flavor.

    Tajin: add 3/4 teaspoon Tajin.

    Allspice: add 1-3 allspice berries.

    Spicy sweet: add 1-3 allspice berries, 1/2 habanero, 1/2 teaspoon white granulated sugar!

    • 1 medium red onion
    • 2-3 limes (juiced, you should get 1/4 cup or 60 ml lime juice from the limes)
