Mexican Marinated Eggs
These Mexican Marinated Eggs went viral on TikTok a few days ago, @marina is the one who came up with this delicious recipe (which is kind of like an Egg Aguachile) and it kept popping up on my fyp, so I knew I had to try them!
You guys, they’re a genius way to make eggs refreshing, zesty and delicious in just 15 minutes and a few basic ingredients! I’ll add more add-ins and serving ideas below but this is my go-to recipe! 💕

Mexican Marinated Eggs Ingredients
Eggs. You can do hard boiled with a firm yolk or a jammy yolk! I like doing a firm yolk so I can slice them and do a salad.
Salt and pepper, to season. I also like a sprinkle of chile and lime seasoning but it’s optional or you can do chili flakes, chili oil or even salsa macha!
Lime, this is the main ingredient so don’t skimp on it! These eggs are basically en Egg Aguachile (or “Aguachile de Huevo” in Spanish), aguachile is made with shrimp, traditionally, and the shrimp is supposed to be almost pickled in that lime juice, kinda like a ceviche, so get lots of limes and squeeze away, lime juice is what makes this dish delicious!
Onions, you can use white or red onions. If you prefer, you can also do our Lime Pickled Onions separately and add those in instead of raw onions. The onions will pickle with all the lime juice you add but not as much as full on pickled onions, so if you love pickled onions I recommend you make a batch.
Serranos or jalapeños, raw or pickled. You can skip these if you don’t want the eggs to be spicy.
Avocado, for creaminess. These eggs are good even without avocado but it’s a delicious addition!
Cilantro, fresh, or skip if you don’t really like cilantro.

How to make Mexican Marinated Eggs
STEP ONE: Boil the eggs. In a medium saucepan over high heat, add enough water to cover the eggs by about 1 inch (or 2.5 cm). Bring to a rolling boil, gently lower the eggs into the water then reduce the heat to medium-high or enough for the water to still bubble.
Boil for 6 minutes for jammy yolks, 8 minutes for soft yolks or 10 minutes for hard boiled. Remove from the hot water and add to a bowl with ice-cold water so they stop cooking. Peel.
STEP TWO: Marinate. In a bowl, add the onions, avocado, jalapeños (if using), lime juice, salt, pepper and any other seasoning or sauce you like, mix gently so everything is evenly seasoned then add in the eggs (whole if jammy or sliced if hard boiled).
Taste and adjust seasonings. Enjoy or store covered with plastic wrap or in an air-tight container overnight for deeper flavors.
Add-ins and Variations
Worcestershire sauce or Jugo Maggi, for deeper flavor!
Sour cream, for a creamy salad version. We like sour cream when serving these as tostadas with a fried yellow corn tortilla as a base, sour cream slathered on top and the eggs!
Hot sauce like salsa macha, chili oil or your favorite one!
Cucumbers, radishes or lettuce, for a more salad-y meal!
Feta cheese or queso fresco, for a cheesy salad!
Potatoes or corn, for a zesty potato salad or corn salad.
