Cumin Carrot Soup with Feta
Hey loves!! Today I made you this creamy Cumin Carrot Soup with Feta Cheese! If you love spiced soups & feta, you *NEED* this baby in your life!
SO. This soup is really easy to make which makes it a great weeknight dish! What you do is heat some olive oil in a saucepan & sautee the onion & garlic until nice and fragrant.
Then you add the carrots & cumin and cook for a few minutes before pouring in the veggie stock & bringing the soup to a boil. I recommend using low-sodium stock if possible so you’ll have more control over the amount of salt in your soup!
Let that baby simmer until the carrots are tender, then blend the soup until smooth (I like using an immersion blender for this but a food processor will work too), top with feta cheese, thyme & red pepper flakes… DONE!!!
I love serving this carrot soup with garlic naan or pita bread but any bread will work!

Cumin Carrot Soup with Feta
Ingredients
- 2 tbsp olive oil
- 1 medium onion minced
- 2 cloves garlic minced or crushed
- ginger
- 2 lb carrots peeled and chopped
- 3 tsp ground cumin
- 6 cups vegetable stock
- 1/3 cup feta cheese
- Salt and pepper to taste
Instructions
- Add the oil to a large saucepan over medium heat, once the oil is hot, add the onion and cook for 4-5 minutes or until soft and fragrant. Add the garlic and cook for another 1-2 minutes.
- Add the carrots and cumin, stir and cook for 7-8 minutes, then pour in the stock and bring to a boil over high heat. Once the mixture is boiling, reduce the heat to medium and simmer for 20-25 minutes or until the carrots are fork-tender, then remove from the heat.
- Using an immersion blender, blend the mixture until smooth, season with salt and pepper, taste, and adjust seasonings if desired.
- Top with crumbled feta, thyme, and red pepper flakes. Serve immediately!
