Roasted Tomato Burrata Salad
This Roasted Tomato Burrata Salad is perfect with a glass of sparkling wine on a hot summer night but I also love it as a light lunch – it really hits the spot hehe!

Ingredients for Italian Burrata Salad
You’ll find the full recipe + ingredients in the recipe card down below but this is what you’ll need:
Olive oil. Use a good-quality extra-virgin olive oil for this recipe! Inexpensive olive oil can taste very pungent and bitter and it can definitely affect the flavor of this delicate dish!
Tomatoes. Use cherry tomatoes, you can also get different colored tomatoes to add more visual interest to the salad!
Garlic. Use fresh garlic cloves for this recipe, you truly want all the flavor!
Oregano. Regular dried oregano.
Salt and pepper. I recommend freshly cracked pepper for best flavor.
Burrata. Definitely invest in a good Burrata because it’s the star of the show and make sure to drain it and leave it out on the counter for 30 minutes before serving. Room temperature burrata has a creamier texture and a much better flavor!
Basil. You’ll need a handful of fresh basil leaves (or more if you’re a basil lover) for this recipe.
Balsamic vinegar (optional). This is optional but if you like the flavor of balsamic vinegar, I recommend drizzling it on top right before serving! Use traditional or condiment grade for best flavor. For context, condiment is a bit more affordable, easier to find (but still delicious) while traditional is typically harder to find and definitely more expensive as it’s usually 10-12+ years aged.
Instructions
STEP ONE: Preheat the oven to 400F (200C).
STEP TWO: Roast the tomatoes. In a large bowl, toss the tomatoes with the olive oil, garlic, oregano, salt and pepper. Place into a large baking dish or onto a non-stick baking sheet. Bake for 20-25 minutes or until the cherry tomatoes have burst.
STEP THREE: Assemble. On a clean plate, add the roasted cherry tomatoes and Burrata. Drizzle the Burrata with olive oil and season with freshly cracked pepper. Top with a few basil leaves and balsamic vinegar (if desired). Serve with bruschetta, sourdough bread, crostini or baguette.

More Serving Ideas!
This is a great appetizer, light lunch or side salad as is but you can pair it with some extra ingredients if you’d like!
Prosciutto. *THE* go-to option if you want to keep the Mediterranean vibe! Salami also works. Tip: if you add prosciutto, add grissini, they’re thin crunchy breadsticks – get some prosciutto, wrap it around the grissini, and dip in burrata!
Olives. Regular green or black olives or even Kalamata olives.
Pistachios, for a fun crunch!
Fruit. This can be served in a separate dish or different small bowls: peaches, strawberries, blackberries, figs, and grapes are some great options that pair well with this dish!
