    Ingredients

    Full measurements included in the recipe card below 🙂 .

    • Peanut butter. Use your favorite creamy peanut butter, I love Jif but any will work for this recipe!
    • Egg. You can make these bars vegan by using 1/3 cup apple sauce (83 g). This substitution can cause the batter to be wetter so you might need to adjust the baking time (the bars may need to bake for up to 22-25 minutes).
    • Honey. Use good quality honey for best flavor, I recommend sticking to a neutral one. You shouldn’t be able to taste the honey at all, it’s just there to sweeten the bars and to contribute to the soft, fudgy texture. Make sure the honey you’re using is liquid or melt it on the stovetop until liquid, then allow it to cool down before using it.
    • Brown sugar. Just a tiny bit for extra flavor.
    • Milk. I tested this recipe with soy milk but any plant-based milk will work.
    • Vanilla. Use your favorite vanilla extract!
    • Oat flour. You can use store-bought oat flour or make your own at home by placing some oats into a blender and pulsing until they turn into a very fine flour. If you’re gluten-free, make sure you get gluten-free oat flour or oats.
    • Baking powder. This is your leavening agent so don’t skip it!
    • Chocolate. You can use chocolate chips or a chopped chocolate bar from the baking aisle for best flavor. I like using chopped chocolate!

    How to make peanut butter cookie bars

    1. Make the batter. Beat together the peanut butter, egg, honey, milk, and vanilla extract. Fold in the oat flour, brown sugar, baking powder, and chocolate chips to the bowl until combined.
    2. Pour the batter into an 8 x 8 brownie pan or baking dish lined with parchment paper with overhangs for easy removal.
    3. Bake at 350 F (180 C) until golden and set on top. To test for doneness, insert a toothpick in the center of the bars: if it comes out wet, they’re ready. Remove the bars from the oven, lift them out of the pan and allow them to cool down to room temperature before slicing.

    Can you make these in advance?

    Yes! The great thing about these bars is that they get fudgier and fudgier the more you let them sit so you can make these up to 2 days ahead of time, if necessary.

    Simply store them in an air-tight container at room temperature and serve.

    Ingredients
      

    • 1/2 cup creamy peanut butter
    • 1 egg room temperature
    • 1/4 cup + 2 tbsp liquid honey
    • 2 tablespoon any plant-based milk I used soy milk
    • 1-2 teaspoon vanilla extract
    • 1 and 1/2 cup oat flour use gluten-free oat flour by grinding gluten-free oats into a very fine flour
    • 1 tbsp brown sugar
    • 1 and 1/2 teaspoon baking powder
    • 1 cup chocolate chips or chocolate bar, chopped

    Instructions
     

    • Preheat the oven to 350 F (180 C). Line an 8 x 8 brownie pan or baking dish with parchment paper with overhangs for easy removal and set aside.
    • Make the batter. Add the peanut butter, egg, honey, milk, vanilla, extract to a large mixing bowl. Use a hand-held mixer or a stand mixer fitted with a whisk attachment to beat the ingredients until combined and smooth. Add the oat flour, brown sugar, baking powder, and chocolate chips to the bowl. Use a silicone spatula or a wooden spoon to mix until just combined.
    • Bake. Pour the batter into the prepared pan and bake for 15-20 minutes or until golden and set on top. To test for doneness, insert a toothpick in the center of the bars: if it comes out wet, they're ready. Remove the bars from the oven, lift them out of the pan and allow them to cool down to room temperature before slicing.
