    This Salsa de Ajo or Colombian Garlic Sauce is one of Colombia’s most popular sauces: garlicky, tangy, and perfectly creamy! Ready in 3 minutes.

    It’s perfect for Patacones, chicken, fries, fish, pork, hot dogs, hamburgers, sausages, and more!

    Colombian Garlic Sauce

    After all the love for my Colombian Pineapple Sauce (thank you 🙂 hehe 💕), I’m excited to share with you guys another popular sauce in Colombia: “Salsa de Ajo” which means Garlic Sauce.

    You can find this garlic sauce in most food trucks, fast food spots and restaurants as it goes on pretty much anything and it’s simply delicious!



    Colombian Garlic Sauce Ingredients

    Mayonnaise. Go for a high-quality mayo you love for best flavor! Lots of people also make the mayo from scratch when making this sauce at home but I prefer using mayonnaise!

    Cream, I like adding a bit of heavy cream for a creamier flavor and texture!

    Water, to thin out and make a bit more pourable but this optional!

    Garlic, always use some fresh garlic cloves for best flavor! Some people also like to add in some herbs like cilantro but I don’t because I think it turns into “salsa verde” or Colombian Green Sauce when I add cilantro to it!

    Salt, for flavor.

    MSG, optional but recommended. I know some of you don’t love MSG and I don’t use it often myself but I really love it in food truck/fast food sauces and I think a lot of those sauces do have a dash of MSG adding that oomph!

    How to use Colombian Garlic Sauce

    This sauce goes on pretty much any dish where you can add garlic or a sauce but here are some popular ideas for you to try:

    • Patacones (Fried Green Plantains)
    • Picada (Fried Food Platter)
    • Chicken
    • Fried fish
    • Potatoes
    • Fries
    • Pork
    • Yuca fries
    • Steak
    • Hamburgers
    • Colombian Hot Dogs
    • Tacos or burritos
    • Chips
    • Veggies
    • Beans or lentils
    • Souvlaki
    • Falafel

    Make-Ahead and Storing Instructions

    Make-Ahead Instructions: You can make this sauce up to 1 day ahead of time, cover and chill in the refrigerator overnight. Make sure the garlic isn’t too strong or it can be a bit too garlicky and almost spicy the next day!

    Storing Instructions: Store in the refrigerator, covered, for up to 2-3 days.

    Ingredients
      

    • 1 cup (230 ml) mayonnaise
    • 3 tbsp (45 ml) heavy cream
    • 6 cloves garlic (finely-minced or grated, make sure it's fresh and not too old for best flavor)
    • 1/4 teaspoon salt (or to taste)
    • 1/4 teaspoon MSG (optional)
    • Water (optional, to thin out for a pourable texture)

    Instructions
     

    • Add all the ingredients into a small bowl, leaving out the water, mix until combined, taste and adjust seasonings. Pour in a splash of water for a more pourable texture, if desired. Serve or cover and chill in the refrigerator for a couple of hours or overnight to make flavors pop.

    Notes

    For Parties: This recipe makes 1 cup of Colombian Garlic Sauce which is enough for 4 servings (1/4 cup each) but you can double it or even triple it for parties.
