Colombian Green Sauce (Colombian Cilantro Garlic Sauce)
There are two “green” sauces in Colombian cuisine: this one which is the creamy green sauce with a mayonnaise base and lots of cilantro, and the zesty spicy one (no mayo) which is Colombian Aji!
This one is a typical food truck/fast food or restaurant topping sauce that is literally so delicious you’ll want to drizzle over whatever dish you’re making and it’s definitely one of my favorites!
This Colombian Creamy Green Sauce is:

- Made with fresh cilantro and garlic!
- Tangy and garlicky.
- Ready in 3 minutes.
- The perfect sauce for all meats, fish, bean or lentil soups, and fried foods!

Colombian Green Sauce Ingredients
Mayonnaise. Use a high-quality mayonnaise you love or use homemade mayo!
Cream, for that delicious creamy flavor and texture.
Lime, freshly-squeezed.
White onion, fresh, for best flavor!
Garlic, one of the main ingredients!
Cilantro, fresh.
Salt, for flavor, you can also add a dash of pepper or MSG!

Make-Ahead and Storing Instructions
Make-Ahead Instructions: Prepare this creamy green sauce 1 day ahead of time, cover and chill in the refrigerator overnight. Make sure the garlic isn’t too strong or it can be a bit too garlicky the next day!
Storing Instructions: Store in the refrigerator, covered, for up to 2-3 days.

Colombian Green Sauce (Cilantro Garlic)
Ingredients
- 1 cup (230 ml) mayonnaise (or homemade mayonnaise)
- 1/2 large white onion
- 1 cup (20 g) cilantro (heaping cup)
- 3 cloves garlic
- 2 small limes (juiced)
- 1/2 teaspoon salt
- 3 tbsp (45 ml) heavy cream
Instructions
- In a blender, add the mayonnaise, white onion, cilantro, garlic, lime juice, and salt. Blend until smooth and creamy, transfer to a serving bowl and mix in the cream until combined. Taste and adjust seasonings. Pour in a splash of water for a more pourable texture, if desired. Serve or cover and chill in the refrigerator for a couple of hours or overnight to make flavors pop.
