Ingredients

Purple sweet potatoes. There are many types of purple sweet potatoes, the most popular in the US is the Okinawan type which is mildly sweet, earthy and nutty. I recommend getting those but Stokes (less sweet than orange sweet potatoes) work too. Some have cream-colored marbling in the flesh, it’s okay, they’ll still give you a fun purple color when mashed.
Butter, for creaminess. Purple sweet potatoes are generally a bit on the drier side compared to regular potatoes or orange sweet potatoes so you need to add some fats to them. I like using unsalted butter so we can control the amount of salt I add!
Milk or cream, to get an even creamier texture. I usually reach for milk since it's what I most often have on hand, and it keeps things a bit lighter, but half-and-half or cream also works and will make them extra rich (just a touch heavier). Plant-based milks work too: my favorite is coconut milk, which pairs so well with the lime!
Lime juice. Lime juice is what really sets this mash apart from all the other traditional recipes: it brightens everything up and keeps the flavor fresh and lively instead of overly rich. It also reacts with the pigment in purple sweet potatoes, turning them magenta! It's my little secret ingredient, but it's totally optional if you’re going for a classic mash. Lemon can be used instead if you prefer, but it’ll give you a softer, less vibrant citrus flavor.

How to make mashed purple sweet potatoes

Step 1: Prepare the potatoes. Wash and peel the sweet potatoes as you would regular potatoes. Cut into 1-inch (2.5 cm) cubes and add to a pot with water and salt. Make sure they’re submerged by about 1 inch of water for even cooking.
Step 2: Cook. Place the pot over medium-high heat, bring to a boil, then cook for 15 minutes or until the sweet potatoes are fork-tender. Drain.

Step 3: Mash. Add the milk, butter, salt, and pepper. Using a potato masher, a fork or a mixer or an immersion blender, mash until the potatoes reach a creamy consistency or your favorite consistency. Keep in mind that these kinds of sweet potatoes are drier than orange sweet potatoes and regular potatoes.
Step 4: Taste and adjust seasonings, if desired. Top with lime juice and mix well (the lime juice will turn the mash from purple to magenta).
