    Baked Honey Dijon Chicken

    This easy Baked Honey Dijon Chicken is juicy and packed with flavor! Coated with a delicious chicken rub, baked to perfection and smothered in sticky Honey Dijon sauce, this oven baked chicken is ready in less than 30 minutes!

    Hey loves! Today I’m sharing with you this Baked Honey Dijon Chicken and I really wish you could smell my kitchen and dip your finger in the honey Dijon glaze because it’s honestly out of this world.

    This dish comes together in just 30 minutes. All you need is a quick chicken rub (no marinating needed hehe) and the 2-minute homemade honey Dijon glaze, throw everything in the oven and you have a delicious dinner that you can serve over rice and with your favorite veggies!


    Easy Baked Honey Dijon Chicken

    Ingredients

    Chicken. I used chicken breast cut into cutlets but you could do any cut you like.

    Olive oil for the chicken rub.

    Garlic powder or even fresh minced garlic if you have it on hand and don’t mind mincing it hehe.

    Chili powder.

    Salt.

    Onion powder.

    Cumin.

    Smoked paprika or regular paprika.

    Optional: chipotle chili powder, to taste.

    Honey. I recommend a liquid mild honey such as Acacia honey but any honey will work, just make sure the flavor isn’t too bold. If your honey isn’t liquid, you can melt it in a small saucepan over very low heat until liquid (no need to add any ingredient to it, just stir it).

    Dijon mustard for extra flavor, if you want to do just yellow mustard leave it out and add in the same amount of yellow mustard.

    Yellow mustard.

    Lemon juice for flavor.

    Apple cider vinegar or white vinegar or just more lemon juice, for flavor.


    How to make Honey Dijon Chicken

    STEPS ONE: Preheat the oven to 425F (220C). Line a baking sheet with parchment paper and set aside.

    STEP TWO: Make the chicken rub. In a shallow bowl combine together the olive oil, garlic powder, chili powder, salt, onion powder, cumin, paprika, and chipotle chili powder (optional). Add the chicken to the bowl and evenly rub the mixture all over the chicken. Place the prepared chicken onto the baking sheet.

    STEP THREE: Bake for 15-40 minutes or until fully cooked through. The amount of time may vary depending on the cut of chicken you’re using. I recommend flipping the chicken once halfway through baking. Chicken is considered safe when the internal temperature reaches 165F (75C). Mine was ready at 15 minutes (total).

    STEP FOUR: Make the honey Dijon glaze. In a small bowl, mix together the honey, Dijon mustard, yellow mustard, lemon juice, and vinegar. As soon as the chicken comes out of the oven, brush it with your prepared glaze, then bake or broil (broil if you like crispy) for another 1-2 minutes. Serve immediately!


    What goes with Honey Dijon Chicken?

    I love serving this chicken over rice with a side of my Oven Roasted Vegetables (this recipe uses whatever veggies you have on hand!).

    I also love it with some Sweet Potato Fries or Sauteed Sweet Potatoes during fall!

    Storing and Reheating Instructions

    Storing Instructions: Store any leftovers covered in the refrigerator for up to 2-3 days.

    Reheating Instructions: The glaze may dry up so I recommend making more glaze and brushing the chicken with it before reheating. Reheat in a 350F (180C) preheated oven for 10-15 minutes or until fully heated through or covered on the stovetop (low heat) for 5-10 minutes or until fully heated through or reheat in the microwave for just 2 minutes.

    Ingredients
      

    For the Chicken

    • 4 large chicken breasts boneless, skinless

    For the Chicken Rub

    • 1 and 1/2 tbsp (20 ml) olive oil
    • 2 teaspoon garlic powder
    • 1 and 1/2 teaspoon chili powder
    • 1 and 1/4 teaspoon kosher salt
    • 1 teaspoon onion powder
    • 1 teaspoon ground cumin
    • 1/2 teaspoon smoked paprika
    • 1/2 teaspoon chipotle chili powder (optional, to taste)

    For the Homemade Honey Dijon Glaze

    • 1/3 cup (110 g) liquid honey
    • 1 tbsp (15 g) Dijon mustard
    • 1 tbsp (15 g) yellow mustard
    • 1 tbsp (15 g) lemon juice
    • 1 tbsp (15 g) apple cider vinegar (or white vinegar or more lemon juice)

      I’ve been wanting to switch up my flavor of baked chicken lately and this was a great addition to my recipe book. Rub made the chicken very flavorful and I actually had it marinate for a couple days. The glaze was a cherry on top making it look and taste so appetizing. Paired this with the Greek lemon zest rice and it was fantastic. Thank you for sharing!
