Arepa Boyacense
If you’re wondering what is Arepa Boyacense, it’s a savory-sweet arepa made with pre-cooked yellow corn flour and all-purpose flour. It’s buttery, with a crispy outside and a melty cuajada cheese center (similar to ricotta).
This is one of the most delicious arepas in Colombia! I love a good Arepa Quesuda (cheesy arepa) or a cozy Arepa de Choclo (sweet corn arepa) for breakfast but Arepa Boyacense is truly the best hehe!!!

Arepa Boyacense Ingredients
Yellow pre-cooked corn flour like PAN. The old-fashioned way to make these is by soaking dry corn, cooking it then grinding it into a dough but it takes much more time so most people nowadays use pre-cooked corn flour!
All-purpose flour. This is the only Colombian arepa that uses flour and, while some might not use it, most people add it in because gluten gives you a much smoother dough that will hold the filling perfectly and toast deliciously.
Milk. For the dough. You can also use water or water and milk but I prefer using whole milk for extra flavor and richness.
Butter, melted. Use unsalted butter.
Brown sugar or panela for that hint of sweet that makes this arepa so delicious!
Salt.
Cuajada cheese (similar to ricotta cheese) or quesito or queso fresco or farmer’s cheese.
How to make Arepa Boyacense
STEP ONE: Make the dough. In a large bowl, add the pre-cooked corn flour, flour, milk, butter, brown sugar and salt then mix until you get a smooth dough similar to Play-Doh.
STEP TWO: Prepare the filling. In a medium bowl, add the cuajada and sugar and salt (if desired) and mix. I like adding in a bit of both. If your cheese is too creamy, you can add 1-2 tablespoon of flour to it.

STEP THREE: Make the arepas. Divide the dough into 5 parts. There’s two ways you can make this arepa. First way: shape each part into a bowl and add the cheese into the well, bring the edges over the filling and pinch to seal.
Second way (if your dough is a bit drier): divide each part into 2, roll out both in between two layers of parchment paper, add the cheese to the center of the first disc then cover with the second. Shape into a patty and set aside. Repeat for all your arepas.
STEP FOUR: Cook. Heat a skillet over medium heat, do not grease. Add the arepas in batches and cook for 5-6 minutes per side and then cook all the edges until toasted. Serve warm with a big cup of Colombian Hot Chocolate con Queso or coffee!

Make-Ahead and Storing Instructions
Make-Ahead Instructions: I recommend fully cooking these and then just re-heating them until hot whenever you want to enjoy one but you can also assemble and cook the next day! Do not microwave when reheating these or the crispy outside will turn soft!
Storing Instructions: Store in an air-tight container in the refrigerator for up to 2-3 days.

- 1 and 1/2 cups (255 g) pre-cooked yellow corn flour (I like PAN)
- 1/3 cup (40 g) all-purpose flour
- 1 stick (113 g) unsalted butter (melted)
- 1/2 cup (125 ml) milk
- 2-3 tbsp (30-45 g) brown sugar
- 1/2 teaspoon salt
For The Filling
- 3.5 oz (100 g) cuajada (or quesito, queso fresco or farmer's cheese)
- 1 tbsp (15 g) brown sugar
- 1/2 tsp salt
