Make Colombian Hot Chocolate Con Queso and make it taste just like you’re in Colombia, enjoying it with some hot Buñuelos and arepas on a chilly night!
Yes, the cheese goes INTO the hot chocolate, if you’re not familiar with this recipe hehe!

Ingredients for Hot Chocolate with Cheese
Milk or water. Some people make it with water and some with milk and some mix both. Whole milk will give you the best results in terms of flavor so you do you. I make mine with whole milk. You can also add some spices if you’d like such as cinnamon, cloves, or even anise.
Chocolate. Traditionally, in Colombia, people use big chocolate bars that you cut into bars like Luker (some come into discs and are called “pastillas” which really means “pills”) and most tend to use 1 bar/disc per serving.
Sugar. This is optional depending on the chocolate you use. If it’s already sweetened you can skip it or add a tiny pinch to taste. If you’re using unsweetened chocolate, I recommend using brown sugar for a deeper flavor.
Some also use panela (unrefined whole cane sugar) to sweeten their hot chocolate. Usually, it’s not as sweet as hot chocolate in the US.
Cheese. This is what will make or break your hot chocolate con queso. You want to use a cheese with a very milky, mild flavor like quesito or mozzarella cheese (the one you shred).

How to make Cheese Hot Chocolate
STEP ONE: Heat the milk or water. Place the milk, chocolate and sugar (if using) in a chocolatera or medium saucepan over medium heat. Allow the mixture to reach a boil, stirring from time to time to keep the chocolate from sticking to the saucepan. If you want to add spices, add them in now.
Some like to boil their hot chocolate 3 times (boil, remove from the heat and repeat), but you can skip this if you want.
STEP TWO: Make it foam. Whisk your chocolate with a traditional wooden molinillo, whisk, or milk foamer until a thick layer of foam forms on the top.
STEP THREE: Add the cheese! Place the cheese into your prepared cups or glasses and then pour the hot chocolate over the top of the cheese. Serve immediately with Buñuelos, arepas, or even almojabanas or your favorite snack!

- 2 bars/pastillas chocolate such as Luker (or use your favorite chocolate bar, approximately 1/2 oz or 16 g)
- 1/4 cup (50 g) quesito or mozzarella cheese

Allow the mixture to reach a boil, stirring from time to time to keep the chocolate from sticking to the saucepan. If you want to add spices, add them in now.
