Cheesy Hot Dogs with Corn
If you need a break from classic hot dogs, these should be high up on your list (maybe along these Colombian Hot Dogs).
I’m all for cheese on hot dogs so I made sure these were extra cheesy, as you can tell from the pictures. They have corn mixed into the cheese, a delicious tangy mustard sauce made with mayo and cream cheese, and caramelized onions for extra flavor!
These are really quick and easy to make but will definitely be something new on your table!
Why this recipe works

Ingredients
Butter for sautéing the onions.
Onions. I like to use white onions for this recipe as the flavor is milder and not too overpowering.
Brown sugar for caramelizing the onions.
Salt and pepper.
Cream cheese for the mustard sauce.
Mayonnaise for the mustard sauce.
Mustard for the sauce.
Cheese. I recommend using Mozzarella cheese slices from a brand that you know will melt well in a skillet (this depends on where you shop and live). Make sure to use a non-stick skillet for melting the cheese because you don’t want it to stick.
Corn. Canned corn is perfect for this recipe.
Cilantro for topping, optional.

How to make cheesy hot dogs with corn
STEP ONE: Caramelize the onions. In a small skillet over medium-low heat, allow the butter to melt completely. Once melted and sizzling, add the onions, season with salt and pepper and saute until soft and fragrant (about 4-5 minutes). Add 1-2 tbsp of water if you notice they start sticking to the pan. Add the brown sugar and cook until golden brown (another 4-5 minutes). Remove from the pan and set aside.
STEP TWO: Make the mustard sauce. In a small bowl, add the cream cheese, mayonnaise, mustard, cayenne pepper, and black pepper. Mix until combined and smooth. If you’d like a thinner sauce for drizzling, thin it out with a splash of water.
STEP THREE: Cook the hot dog sausages according to package instructions. You can usually boil, cook in a skillet, or grill. While the sausages are cooking, slice the buns.
STEP FOUR: Assemble the hot dogs. Start off by spreading some of the sauce onto the sliced buns, add the sausages, then top with more sauce. Next, melt the cheese. I recommend doing this last as you need to work very quickly once the cheese has melted.
STEP FIVE: Melt the cheese. In a small non-stick skillet over low heat, add the cheese and allow to melt without stirring. Once the cheese has melted fully, mix in the corn, then turn off the heat. Top the prepared hot dogs with the corn and cheese mixture, caramelized onions, cilantro, and serve. Enjoy!
Can I make cheesy hot dogs with corn ahead of time?
You can caramelize the onions up to 1 day ahead of time and store covered or in an air-tight container in the refrigerator.
Can I store leftover hot dogs?
You can but these hot dogs are best eaten as they’re made as they don’t reheat well: the cheese sets as soon as it comes down to room temperature but reheating would mean reheating the assembled hot dogs along with the sauce which may cause the sauce to split.
Store in an air-tight container in the refrigerator for 1 day.

- 2 tbsp (30 g) unsalted butter
- 1 medium white onion
- Salt and pepper
- 2 tsp brown sugar
For The Sauce
- 4 tbsp (60 g) cream cheese
- 3 tbsp (45 g) mayonnaise
- 1 tsp (5 g) mustard
For The Dogs
- 4 dogs
- 4 buns
- 4 slices cheese
- one 11-oz can (310 g) corn
- Cilantro (for topping)
Instructions
- Caramelize the onions. In a small skillet over medium-low heat, allow the butter to melt completely. Once melted and sizzling, add the onions, season with salt and pepper and saute until soft and fragrant (about 4-5 minutes). Add 1-2 tbsp of water if you notice they start sticking to the pan. Add the brown sugar and cook until golden brown (another 4-5 minutes). Remove from the pan and set aside.
