Apple Strudel with Puff Pastry
This is my go-to shortcut to make Apple Strudel at home! Traditionally, Strudel is made with a super thin elastic dough that’s pretty labor-intensive to make at home.
By using puff pastry, you can easily make Apple Strudel in under an hour without missing out on any of the flavor since you’ll be stuffing it with the traditional filling!
Everything to love about Puff Pastry Apple Strudel
- Traditional filling. While you’re using a shortcut for the dough, this recipe features a traditional Austrian Strudel filling: apples, breadcrumbs, butter, raisins, and lots of cinnamon!
- Quick and easy. By using puff-pastry, you’ll be able to confidently make Strudel at home no matter your baking skills and in just 40 minutes!
- Simple ingredients. You probably already have everything you need to make this apple dessert!
- Serve with your favorite topping: vanilla ice cream, vanilla sauce, custard, or whipped cream!

Ingredients
Puff Pastry. You can use frozen or refrigerated puff-pastry. I do recommend frozen for this dessert because it’s usually thicker and makes for a more satisfying dough (flakier and crispier).
Butter. I like unsalted. This is for both toasting the breadcrumbs used in the filling and for brushing right before baking!
Breadcrumbs. To absorb some of the moisture of the apples when cooking and keep your puff pastry from getting soggy.
Apples. Granny Smith, Honey Gold, or anything you can get your hands on, to be honest. All apples work.
Cinnamon. For flavor.
Rasins. You want to soften your raisins in a small saucepan filled with boiling water for about 1 minute before adding them to your strudel.
Sugar. Traditionally, white sugar is used but I personally like using brown sugar! You will use sugar for both the filling and for topping the strudel for a crispy caramelized top!
How to make apple strudel puff pastry
Prepare the puff pastry. Preheat the oven and line a baking sheet with parchment paper. On a lightly floured work surface, roll the thawed puff pastry into a rectangle and transfer the rectangle onto your prepared baking sheet.
Assemble the strudel. Add the bread crumbs to the puff pastry leaving about 1-inch from both sides, then add the apples, cinnamon, raisins, and brown sugar. Lift the front side of the pastry and fold it over the filling, then lift the opposite side and fold it over. Finally, gently pinch the sides down to seal. Brush with water and sprinkles with white sugar.
Bake until flaky and golden brown on top.

Can I make it ahead of time?
No, I don’t recommend it. Apple strudel made with puff pastry is better eaten as it’s made because the puff pastry will soften up overtime.
How do I store apple strudel?
You can store covered or in an air-tight container at room temperature for 2-3 days or in the refrigerator for up to a week. Reheat in the oven or microwave until hot.

Apple Strudel with Puff Pastry
Ingredients
- 1 package frozen puff pastry
- 1 tablespoon unsalted butter
- 2 tablespoon breadcrumbs
- 2 apples (peeled and sliced into 1/4-inch slices)
- 1/4 cup (50 g) white granulated sugar (or brown sugar)
- 1/4 cup (40 g) raisins (softened in a small saucepan of boiling water for 60 seconds)
- 1/2 teaspoon ground cinnamon
- 1 tablespoon unsalted butter (for brushing)
- 2 tablespoon white granulated sugar (or brown sugar, for topping)
Instructions
- Prepare the puff pastry. Preheat the oven to 350 F (180 C) and line a baking sheet with parchment paper. On a lightly floured work surface, roll the thawed puff pastry into a 10×12-inch (25×30 cm) rectangle and transfer the rectangle onto your prepared baking sheet.
- Toast the breadcrumbs. In a small skillet over medium-low heat, add 2 tablespoon of butter and allow to melt until sizzling. Add in the breadcrumbs and toast for 1-2 minutes or until golden brown and crispy.
- Assemble the strudel. Add the toasted breadcrumbs to the puff pastry leaving about 1-inch (2 cm) from both sides, then top with the apples, sugar, raisins, and cinnamon. Lift the front side of the pastry and fold it over the filling, then lift the opposite side and fold it over. Finally, gently pinch the sides down to seal. Brush with 1 tablespoon of melted butter and sprinkles with white sugar. If you have any leftover melted butter, you can drizzle it over your strudel once it comes out of the oven!
- Bake for 30-35 minutes or until flaky and golden brown on top. Serve warm with vanilla ice cream, vanilla sauce, custard, or whipped cream.
